Updating my comment. I had to double the cooking time, and this time followed exactly with unsalted butter. This year I added to full 3T of roasted garlic. And 0.5 tsp of salt for the unsalted butter. A bit less salty. All in all, everyone loved this recipe last year that it grew on me. I also added bbq peanuts, doubled last years amount. This year I am prepared for a 3 hour slow roast. Everyone cannot wait to eat it.5 stars
